If you’re like me… you LOVE the fresh, homemade hummus you can get from Greek restaurants, but the stuff from the store… ick!
It took me FOREVER to find a great hummus recipe, and even then, I had to tweak it and figure out the best ratio of ingredients. Now, I love my hummus so much, I could eat it straight from the bowl! Okay… so I actually DO sometimes…
Of course, the fact that hummus is VERY yummy is only the icing on the cake. One of the challenging things about transitioning into a healthier lifestyle is it seems like I’m either hungry or craving something that isn’t exactly healthy all the time. I love having hummus on hand, because it is one of the most guilt-free snacks I can eat! It is literally packed with healthy goodness AND super easy to make. After fixing up a huge bowl, it serves as my snack or side go-to for the rest of the week! 🙂
As far as nutrition goes, hummus is packed with plant-based protein and is rich in vitamins and minerals such as magnesium, copper, potassium, zinc, iron, B6, thiamin, folate, and much, much more! The olive oil and tahini (sesame seed butter) in it are HUGE natural anti-inflammatory sources and are super rich in antioxidants. Hummus is also high in healthy fiber and prebiotics, which promotes a healthy, regular gut and feeds your good intestinal bacteria. Chick peas (or garbanzo beans) are also one of the top, heart-healthy foods and hummus overall has a low glycemic index, making it an awesome choice for EVERYONE, no matter what your health situation is.

So, now that we are convinced it’s very healthy, let me show you how easy it is to make!!

- 2 cups cooked (or canned) Garbanzo beans
- 2/3 cup Extra Virgin Olive Oil
- 1/3 cup Lemon Juice (or more if you like!)
- 3 cloves Fresh Garlic
- 3 Tbsp Tahini (Sesame seed butter)
Ingredients

- Throw it all together in a blender… yes you heard that right!!
- Blend until smooth and creamy. (Don’t be afraid to add more olive oil if you would like it a little more creamy.)
- Enjoy with your favorite veggies, crackers, or just with a spoon out of the bowl!
Some of my favorite ways to enjoy hummus are:
-With steamed veggies and baked chicken
-With lightly boiled spirilized zucchini or squash and steamed salmon
-Over a salad
-With sugar snap peas and carrots
-On a wrap with spinach, tomatoes, grated carrots and chicken
